Gather the ingredients

  • 2 tablespoons olive oil
  • 1 onion and 1 carrot
  • 1 medium diced red pepper
  • 3 medium cloves minced garlic

  • 1 can diced tomatoes
  • 2 cups chicken stock
  • 1 tablespoon hot sauce (optional)
  • 2 bay leaves

  • 1 orange, zested
  • 1 tablespoon red pepper flakes and smoked paprika
  • 1 pinch saffron, dried basil and dried thyme
  • salt and ground black pepper to taste

This sauce is especially great with blackened fish but works wonderfully on just about any grilled protein.

Heat oil in a large saucepan over medium-high heat until it shimmers. Add the onions , carrot and red peppers, cooking and stirring occasionally for 3 to 5 minutes . Until the vegetables begin to soften. Add garlic and cook for another 30 seconds, until fragrant.

Next, stir in the tomatoes, stock, hot sauce, bay leaves, orange zest, saffron, basil, and thyme. Bring the mixture to a boil, then reduce the heat to low.

Let the sauce simmer gently for at least 1 hour, allowing the flavors to meld. Season with salt, black pepper, and paprika to taste before serving.
