This recipe is the simplest I've come across for making jam. The result is a smooth, spreadable, and absolutely delicious treat.
How to make blueberry jam?
The recipe is a nice introduction to canning jam. The berries broke down well, and the extra whole berries keep a real jam texture. The jam set up wonderfully. It’s not a super-sweet jam, either. Canning takes effort and creates extra dishes, but this recipe finished in just under an hour:
Prepare a water bath canner and jars. Fill a pot halfway with water and put in the cleaned jars. Bring to a boil and then reduce to a simmer. and Put the lids in a small saucepan, add water, and bring almost to a boil. Lower the heat to very low to keep the lids hot.
Wash and drain the blueberries thoroughly, then put them in a cast iron pot enamelled with the zest of the finely grated lemons. And add more Lemon juice.Finally, add sugar and cook, stirring constantly, over medium heat until thickened, about 1 hour.
Remove the pan from the heat and drop a few spoonfuls of the jam onto a frozen saucer. Place it in the fridge for a minute. If the jam wrinkles and has a gel-like consistency when you push your finger through it, it's ready.
If not, continue boiling for another couple of minutes and repeat the process until it reaches the desired consistency.
Once ready, transfer the jam into a sterilized, hot jar using a small ladle or jam funnel.
How long will blueberry jam last and what is the best way to store it?
Like all homemade jams, blueberry jam is best enjoyed within the first year. However, it can remain safe to eat for years due to the preservative qualities of sugar. After opening, store the jam in the refrigerator and consume it within a few months. To extend its shelf life, always use a clean spoon when serving
